2 tablespoons butter
3 teaspoons lemon juice, divided
1 tablespoon melted butter
1 teaspoon Dijon mustard
1 teaspoon raspberry vinegar
2 teaspoons honey
1 teaspoon chopped fresh tarragon
salt and pepper to taste
1 pound tilapia fillets
Directions
Preheat the oven broiler. Place a sheet of aluminum foil on a baking sheet, and coat with 2 tablespoons butter.
In a bowl, whisk together 1 teaspoon lemon juice, melted butter, mustard, raspberry vinegar, honey, tarragon, salt, and pepper.
Place the tilapia on the prepared baking sheet, and broil about 3 minutes in the preheated oven. Turn tilapia, and drizzle with about half the lemon juice dressing mixture. Continue broiling about 3 minutes, turn, and drizzle with remaining dressing. Continue broiling about 2 minutes, or until fish is easily flaked with a fork. Remove from heat, and sprinkle with remaining lemon juice to serve.

Aunt Norma's Rhubarb Muffins recipe.
Ingredients
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups brown sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 cup buttermilk
1 1/2 cups diced rhubarb
1/2 cup chopped walnuts
1 tablespoon melted butter
1/3 cup white sugar
1 teaspoon ground cinnamon
Directions
Preheat the oven to 350 degrees F (175 degrees C). Grease two 12 cup muffin pans or line with paper cups.
In a medium bowl, stir together the flour, baking soda, baking powder and salt. In a separate bowl, beat the brown sugar, oil, egg, vanilla and buttermilk with an electric mixer until smooth. Pour in the dry ingredients and mix by hand just until blended. Stir in the rhubarb and walnuts. Spoon the batter into the prepared cups, filling almost to the top. In a small bowl, stir together the melted butter, white sugar and cinnamon; sprinkle about 1 teaspoon of this mixture on top of each muffin.
Bake in the preheated oven until the tops of the muffins spring back when lightly pressed, about 25 minutes. Cool in the pans for at least 10 minutes before removing.

2 envelopes Fleischmann's� RapidRise Yeast

3/4 cup very warm water (120 degrees F to 130 degrees F)
3 tablespoons olive oil
12 ounces fully cooked, frozen, breaded chicken (breast or tenders), chopped
2 cups spaghetti sauce
1 cup Italian blend shredded cheese
1 teaspoon Spice Islands� Italian Herb Seasoning
Directions
Mix batter ingredients together in a pre-sprayed 8x8-inch baking dish. Let rest 5 to 10 minutes.
Top batter evenly with chicken. Pour marinara sauce over chicken, sprinkle with cheese and herbs.
Bake by placing in a COLD oven; set temperature to 350 degrees F. Bake for 30 minutes, or until done.
